Pumpkin Spice Fruit and Nut Birdie Bread

2 cups flour (spelt, quinoa, buckwheat or garbanzo) I often use a mixture of these flours.
1/4 cup wheat germ
1/4 cup ground flax seed
2 cups pumpkin puree
a large graded carrot
a graded apple
handful of cranberries
a sprinkle of rolled oats
handful of chia, sesame, flax seed and millet
handful of chopped nuts, pine, walnut, pecan, cashew, almond
dash of ginger and cinnamon
little spoonful of coconut oil
1 eggs
unsweetened apple sauce as needed for consistency
topped with some of the seeds and chopped nuts

Bake at 350 for about 40 min. I used a glass rectangle baking pan for this batch

  1. Are the cranberrys fresh or dried or does it matter?

  2. Fresh is always preferred. With dried, it contains a lot of sugar and it’s hard to find dried fruit that is naturally dried and sulfur dioxide free.

    Can I make these as muffins and if so do you just mix everything together in a bowl and pour?
